There is nothing that is much easier to make than a quick bread or loaf. Just mix up the ingredients, put the mixture in the pan, set the timer for around an hour and go do some other things. Come back when the timer goes and you have a lovely, fresh, home-made treat that everyone will love.



I often make a loaf/quick bread and once it is well cooled slice it. I then freeze it and if I want a slice or two for a lunch for my husband I just go to the freezer and get a couple of slices. Having a frozen loaf is also great if you end up with unexpected company. Just take several slices out of the freezer, wrap them in paper towel and defrost them in the microwave. Works a treat.

As I have said in all my other books, I come from a long line of cooks on both sides of my family. I have been writing about food for well over 35 years and love to create recipes.

All of the recipes in this cookbook are ones that my family and I have been making for years. They're tried and true and all are easy to make and turn out exceptionally well every time.

1.Bun Cha- Ha Noi

Bun cha (Bun Cha) is a Vietnamese dish of grilled pork and noodle, which is thought to have originated from Hanoi, Vietnam.Bun cha is served with grilled fatty pork (cha) over a plate of white rice noodle (bun) and herbs with a side dish of dipping sauce. The dish was described in 1959 by Vietnamese food writer Vu Bang (1913-1984) who described Hanoi as a town "transfixed by bun cha." Hanoi's first bun cha restaurant was on Gia Ngu, Hoan Kiem District, in Hanoi's Old Quarte

2. Banh chung (Chung cake)

Banh chung is a traditional Vietnamese rice cake which is made from glutinous rice, mung beans, pork and other ingredients. Its origin is told by the legend of Lang Lieu, a prince of the last king of the Sixth Hung Dynasty, who became the successor thanks to his creation of banh chung and banh giay, which symbolized, respectively, the Earth and the Sky (banh chung is the Earth and banh giay is the Sky). Considered an essential element of the family altar on the occasion of tet, the making and eating of banh chung during this time is a well-preserved tradition of Vietnamese people. Beside the tet holiday, banh chung is also eaten all year round as Vietnamese cuisine.

3. Pho or pho is a Vietnamese noodle soup consisting of broth, rice noodles called banh pho, a few herbs, and meat, primarily made with either beef or chicken. Pho is a popular street food in Vietnam and the specialty of a number of restaurant chains around the world. Pho originated in the early 20th century in northern Vietnam, and was popularized throughout the rest of the world by refugees after the Vietnam War. Because pho's origins are poorly documented,there is significant disagreement over the cultural influences that led to its development in Vietnam, as well as the etymology of the word itself.The Hanoi and Saigon styles of pho differ by noodle width, sweetness of broth, and choice of herbs. A related noodle soup, bun bo Hue, is associated with Hue in central Vietnam.

4.Bun bo Hue

Bun bo Hue or bun bo is a popular Vietnamese soup containing rice vermicelli (bun) and beef (bo). Hue is a city in central Vietnam associated with the cooking style of the former royal court.The dish is greatly admired for its balance of spicy, sour, salty and sweet flavors and the predominant flavor is that of lemon grass. Compared to pho or bun rieu, the noodles are thicker and more cylindrical.

5.Cha gio(Nem Ran) (minced pork sausage), also known as Nem ran (fried sausage) in the north, is a popular dish in Vietnamese cuisine and usually served as an appetizer in Europe and North America, where there are large Vietnamese communities. It is ground meat, usually pork, wrapped in rice paper and deep-fried.
